Baked Brussel Sprouts ===================== 3 variations Variation 1 (Victoria likes) ============ - Brussel sprouts - cut in half - 2 tbsp olive oil - 1/4 tsp salt - Few grinds from pepper mill 1) Combine oil, vinegar, salt + toss brussel sprouts 2) Cook 400 degrees for 35-40 min in cast iron grill skillet 3) Sprinkle with salt (like french fry) Variation 2 (Jeff likes - Hickory Vinegar great) ============ - Brussel sprouts - cut in half - 1.5 tbsp olive oil - 1.5 tbsp vinegar - 1/4 tsp salt - Few grinds from pepper mill 1) Combine oil, vinegar, salt + toss brussel sprouts 2) Cook 450 degrees for 25-30 min in cast iron grill skillet 3) Toss with some more vinegar + sprinkle with sea salt Variation 3 (Looks good, try it) ============ - 1 lb brussel sprouts (1-1.5" in diameter), trimmed + Halved - 5 tbsp extra virgin olive oil - 1 tbsp lemon juice - 1/4 tsp salt - 1/4 cup shredded Pecorino romano cheese (or parmesean cheese) 1) Put sprouts in single layer cut sides down in 12 inch non-stick skillet(try flat cast iron). 2) Drizzle oil evenly over sprounts 3) cover + cook on stove top over medium-high heat until sprouts bright green and cut side starting to brown (about 5 min) 4) Uncover and cook until cut size deeply browned and paring knife goes in easy (2-3 min). Adjust heat as needed to avoid over browning 5) while cooking, combine lemon juice + salt in small bowl 6) When off heat, add lemon juice mixture to skillet and stir to evenly coat. 7) Season with salt + peper + put on large plate. Sprinkle cheese on top. Variation 3a: Substitude 2 tsp cider vinegar, 2 tsp honey and 1/4 tsp red pepper flakes for lemon + omit pepper + cheese. Variation 3b: Substitute 1 tbsp dijon mustard, 1 tbsp packed brown sugar, 2 tsp white wine vinegar + 1/8 tsp cayenne pepper for lemon juice. Omit pepper + cheese. Variation 4 ============ - 1 lb Brussel sprouts - cut in half - 1/4 cup olive oil - 3 tbsp maple syrup - 4 slices bacon cut in 1/2 inch - 1/2 tsp salt - 1/4 tsp pepper 1) Combine all + toss brussel sprouts 2) Cook 400 degrees for 45 min in cast iron grill skillet stiring at 1/2 way point Variation 5 =========== At Bethany public house they toss it with: - Lemon Juice - Capers - Garlic butter - Top with parm cheese shavings (thin wide)
