Teriyaki Chicken Fried Rice =========================== Ingredients: Fried Rice: 4 cups cooked rice (prepare 2 cups of uncooked rice*) 1/2 cup oil 2 lbs chicken breasts (2 large chicken breasts cut into small 1/2" chunks -- 1 lbs is ok) salt and pepper 1 onion (chopped - 1/2 onion is ok) 1 carrot (diced) 1 zucchini (cut into matchsticks) Peas (frozen) 2 eggs (try 3, Katie wanted more) Teriyaki Sauce: 3 garlic cloves (crushed) 1/4 tsp dried ginger 1/4 cup soy sauce 1/4 cup water 1 Tbsp apple cider vinegar 3 Tbsp sugar Instructions: Make the Teriyaki Sauce: 1) In a measuring cup, whisk together the garlic, ginger, soy sauce, water, apple cider vinegar, and sugar. Set aside. Prepare the vegetables and chicken: 2) Cut, dice, and chop the onion, carrot, peas, and zucchini. 3) Cut chicken into strips and season with 1/2 tsp salt and 1 tsp pepper. 4) Heat cast-iron wok (or large skillet) until hot; add the oil. 5) Heat the oil and add in the vegetables. Fry for 3 minutes over high heat and remove. 6) In the same wok add the chicken breasts and cook over high for 5 minutes, stirring occasionally. Remove and set aside. 7) Add 1/4 cup oil to the Wok and break in 2 eggs. Scramble and chop the eggs then stir in the rice. 8) Fry for 3 minutes over high heat. 9) Then stir in the teriyaki sauce. 10) Add in the sauteed vegetables and chicken and stir-fry everything together until incorporated.
