Easy Shredded Chicken ======================= - Put chicken breast in a pot with water + bring to a boil - Once boiling, cook for 10 min (or until chx hits 165) - Take out chicken + wait 5 min so cool enough to handle - Shred with two forks OR in stand mixer with paddle attachment This will keep 5 days in fridge, freeze for 2 months. Great to do ahead and have onhand for enchilladas, salad, bbq chx. chicken pot pie, etc..
