German Apple Pancake ==================== NOTE: Original recipe was for 10" pan in parenthesis, but I am using 12" cast iron pan so added roughly 50% more - 1.25 cup half and half (vs 3/4 cup) - 3 eggs (vs 2 egg) - 1.5 tbsp sugar (vs 1) - 1.5 tsp vanilla extract (vs 1) - 1/2 tsp salt (did not increase - 1/2) - 3/4 cup flour (vs 1/2) - 1.5 tbsp unsalted butter (vs 1) - 4 granny smith apples - peeled, cored + cut in 1/4" sliced (vs 1.25 lb) - 1/4 plus 1/8 cup packed brown sugar (vs 1/4) Instructions: ============= 1) Oven rack in middle. Preheat to 500 degrees. 2) Mix half+half, eggs, sugar, vanilla + salt in food processor. Add flour + mix to get rid of flour pockets. 3) Heat 12" cast iron pan over medium heat 3 minutes. Melt butter in skillet. Add apples and brown sugar. Cook, stirring occassionally until soft and golden brown (about 5-10 min) 4) Spread apple in even layer on skillet. Pour batter over top and put in oven. 5) Reduce heat to 425 and bake until pancake lightly brown and edges puffed (about 12 min) 6) Take out of oven, dust with powdered sugar + serve.
