Roasted Winter Veggies: ====================== - 1/3 cup olive oil - 3 medium carrots cut into 1.5 inch circles - 1/2 cups brussel sprouts halved - 4 red potatoes cut into 1.5 inch slices - 3 med parsnips cut into 1.5 inch slices - 1 cup sweet potato cut into 1.5 inch slices - 1 tbsp dried oregano - 1 tbsp dried rosemary - 1 tsp dried thyme - 1 tsp dried basil - 1/4 tsp salt - 1 tsp fresh ground black pepper 1) Preheat oven to 400 2) Toss veggies in bowl with oil + spices 3) Grease large 11x17 backing sheet with olive oil 4) Cook 35-40 min (until soft)
