Burritos with chicken and rice ================================ - 1/2 cup long grain rice - 1 tbsp veg oil - 1 onion chopped - 1/2 tsp ground clove - 1 tsp dried or fresh oregano - 7 oz can chopped tomatos in juice - 2 boneless chicken breasts - 1 1/4 cups cheddar cheese - 4 tbsp sour cream - tortillas Instructions: 1) Cook rice, drain, rinse, drain again 2) Heat oil in sauce pan, add onion, clove + oregano. Cook 2-3 min 3) Add rice + tomatos + cook over low heat until most of juice is absorbed. Set aside 4) Put chicken in large pan, add water to cover, bring to boil. Lower heat + simmer 10 min (or until cooked). Put chicken on plate to cool a bit 5) Preheat oven to 325 6) Shred chicken with forks 7) Add chicken to rice mixture + add cheese. Optionally stir in sour cream 8) SOften tortila with wet paper towel in microwave (cover and cook 10-30 seconds?) 9) Put filling in tortilla and wrap up. Keep in oven in covered dish to keep warm while you make more.
