Lemon Baked Chicken with Asperagus ================================== - Serves 4 - 1 tbsp oil - 2 chicken breasts (halved) - 1/2 tsp salt - 1/4 tsp pepper - 2 tsp minced garlic (original called for 2 tbsp) - 1/2 bunch aperagus with ends trimmed (and optionally broken into smaller pieces) - 1 lemon sliced - 1/3 cup chicken broth - 2 tbsp lemon juice - 1 and 1/2 tsp oregano - 1 tsp thyme (could use less) Instructions ============= 1) Place 12 inch cast iron skillet in oven and preheat to 350 degrees 2) Once preheated, take out skillet and put on stovetop on medium heat + add oil 3) Season chicken with salt and pepper. Cook in skillet 2 minutes on each side 4) Add garlic, asperagus and lemon slices to skillet 5) Mix chicken broth, lemon juice, oregano and thyme. Then pour over everything in the skillet 6) Bake in oven 10 minutes or until chicken reaches 165 degrees NOTE: Family didn't like the aperagus in the sauce much. Victoria and I loved the chicken. Served with mashed potatos.
