Pretzels: ========== Ingredients: - 4 to 4.5 cups flour - 1 package active dry yeast - 1 1/2 cup milk - 1/4 cup sugar - 2 tbsp cooking oil - 1 tsp salt - 2 tbsp salt - 3 qts boiling water - 1 slightly beaten egg white - 1 tbsp water - Coarse salt Instructions: 1) In bowl, mix 1.5 cup flour and yeast 2) In a saucepan heat and stir milk, sugar, oil + 1 tsp salt until warm (120-130 degrees) 3) Beat with mixer on low for 30 seconds. Then beat on high for 3 minutes. Add in flour as you can a spoon at a time 4) Using dough hook, knead with as much of remaining flour as possible to make moderately stiff dough that is smooth and elastic (6-8 minutes) 5) Shape dough into ball. Place in greased bowl. Turn once to grease other side of ball 6) Cover and let rise in warm place for 1.25 hrs (until it doubles) 7) Punch down dough. Turn onto lightly floured surface, cover + rest 10 min. 8) Roll dough into 12x10 in rectangle. Cut into twenty 12.5 inch strips. Pull strips into 16 inch long rope 9) Shape into prezel (moisten where ends connect 10) Place pretzels on greased baking sheet. Bake 475 for 4 minutes. Remove from oven and lower to 350. 11) Dissolve 2 tbsp salt into boiling water. 12) Put in pretzels for two minutes, turning once. 13) Remove with slotted spoon, drain on paper a few seconds, then place on greased baking sheet (1/2 inch part) 14) Combine egg white and 1 tbsp water. Brush pretzels + sprinkle salt. 15) Bake in 350 degree oven for 20-25 minutes or until golden brwon. Cool on wire racks.
