Potato Wedges ============= Ingredients: - Sweet potato, red potato or russet or Yukno gold, baked* - oil - Salt Instructions: - Cut length wise and then again into wedge (stake fries) - Heat large cast iron skillet over medium heat. Add oil + let get hot (5 min) - Put wedges in (flesh side down) - not touching each other - Cook 6 minutes (flipping half way) - Remove + sprinkle with salt (put on paper towel if too much oil) NOTE: To bake potatos: - Pierce with a fork - Cook in oven at 375 for 45min on tray (until soft, knife pierces) - Cool overnight or refridgerate 45min This gets them soft on inside, crisp on outside
