Canned Berry Jam from frozen berries ===================================== This is good if you freeze berries from yard to can into jam later Ingredients: - 4 cups frozen berries (any kinds - Strawberry, raspberry, blueberry) - 4 cups sugar - 2 tbsp lemon juice - pinch of salt Makes 6 half-pint jars. 1/4 receipe from raspberry filled 2 quarter-pint jars Directions: 1) Prepare water bath canner + sterilize 6 half pint jars 2) Remove berries from freezer and put in heavy bottom pan on low heat 3) As berries defrost the liquid comes out. Stir continuously until juices released. Heat can increase as you get more liquid 4) Bring to boil over high heat 5) Add sugar + stir to combine 6) Mash with potato masher if needed for desired texture. 7) Add lemon juice + stir to combine 8) Cook until mixture thickens + bubbles are slow like lava vs bubbling water (I turned temp down if it started to burn or harden) 9) Should pass gel test (pick some up in spoon. It should slide off in sheets vs individual drops) 10) Ladel into jars with 1/4 inch head space 11) Wipe lid, cover with lid + rims.
