Strawberry Jam ============== Ingredients: (1/4 recipe or about 1/2 a pint jar) - 2 lb fresh strawberries, hulled (or 1/2 lb) - 4 cups white sugar (or 1 cup) - 1/4 cup lemon juice (or 1 tbsp) Instructions: - 1 (Crush berries): Crush berries with potato masher - 2 (Mix + Heat): Combine all in heavy bottom sauce pan. Stir over low heat until sugar is disolved. Then increase to med or high + bring to a full rolling boil. Stur often until 220 degrees. Don't burn!Takes around 10-15 min. Temp is important ot make sure jam starts to gel (not thin/runny) - 3 (Fill jars): Put in hot sterile jars leaving 1/4 inch at the top. TOp with lids + screw rings on tightly. If using in 2 weeks, simply put in fridge and stop here. - 4 (Process/Can): Put in rack in large bot + fill halfway with water. Bring to a boil + lower jars so they are covered at least an inch. Cover + process 10 minutes. Then remove jars + let rest 12-24 hours. Store in coool drk area.
