Lentil and pea Soup ==================== Ingredients: - 1 cup lentils, rinsed + picked over (check for stones) - 1 cop split peas, rinsed + picked over - 8 cups chicken stock (low sodium if possible) - 1-2 cups cubed ham (maybe 3/4 lb) - 1 large yellow onion, diced - 2 cloves garlic, minced - 2 carrots sliced - 2 celery stalks, sliced - 2 bay leaves, - 1 tsp thyme - 1/2 tsp oregano - fresh ground pepper to taste - 1 tbsp balamic vinegar (after - Katie no like) Instructions: 1) In large pot over high heat, combine all ingredients except pepper, ham + vineger + bring to a boil 2) Reduce heat to med-low and simmer, covered until lentils + peas tender. About 1 hour . Stir 3) Remove bay leaf and puree 1/2 the soup 4) Add ham allow it to warm up 5) Server soup, adding desired pepper + vinegar
